A quick search for recipes that include white wine will result in thousands of ideas and plans. Limiting the search to white wine pasta sauce cuts the number of recipes and cooking tips down, but only a bit. There are, literally, dozens of ways to prepare delicious pasta sauces using a good white wine.

  • ¼ cup of white wine with two teaspoons of fresh lemon juice,

  • two tablespoons of cream and

  • four tablespoons of butter.

This one includes one

  • small onion,

  • two tablespoons of butter,

  • four tablespoons of flour,

  • 500 ml. dry white wine,

  • 250 ml chicken broth,

  • one teaspoon grated lemon zest,

  • one tablespoon of fresh, chopped thyme,

  • one tablespoon fresh dill,

  • three tablespoons of Dijon mustard and

  • salt according to taste.

Making the sauce is easy:

The butter is heated in a large saucepan over low heat then onion is added and sautéed. Flour is blended in then the white wine and broth are poured in gradually. The mixture should be stirred continuously and brought to a boil. Simmer for 10 minutes. Lemon zest, thyme, dill and mustard should then be stirred in and salt added to taste.
